Weekly Menu || Vol.008

Oooops! I fell off the weekly menu bandwagon, but I’m jumping back on today. 

MON: Veggie club sandwiches w. fresh herb potato salad

TUES: Cornbread, soy patty, roasted veggies

WED: Tomato jam and mozz panini w. salad or pasta salad (can’t decide!)

THURS: Migas w. black beans and corn

FRI: Veggie burgers w. baked potatoes

SAT: French toast w. eggs or fruit

SUN: No clue!  Any suggestions?

Weekly Menu || Vol.006

I almost didn’t make it today with my list.  I was distracted all of yesterday and plain busy today with unexpected errands.  But I needed to make a list, even if I can’t make it to the store for shopping tonight like I usually do, because if I didn’t, it would make tomorrow that more exhausting.

MON:  Calzones with a green salad

TUES:  Veggie tacos with Tex-mex salad and rice

WED:  Maple glazed carrots, lentils w/potatoes, stuffing

THURS: Vegetable stew with toasted bread (The temps will finally drop a little!)

FRI:  Twice baked potatoes with chili

SAT: Mushroom risotto (dairy free) with vegetables

SUN: Meatless meatball subs with olives and green beans

Weekly Menu || Vol.005

Whaaat?  I can’t believe this will be two weeks in a row that I’m posting our weekly menu.  I’ll have to pat myself on the back for hitting a goal.  Or at least progressing in my goal.

The theme of this week is the same as last week.  Simplicity. 

MON: Vegetarian Chili with Cornbread

TUES:  Fettuccine with Avocado Sauce and Salad

WED: Tortilla Soup and Rice (From Bridget’s menu)

THURS: Pizza Night!

FRI:  Pancakes or some sort of breakfast food.

SAT:  Vegan Sloppy Joe’s and vegetables (I didn’t make this last week like I planned so I’m moving it forward to this week.)

SUN: Potato Soup with Grilled Sandwiches

After typing this out it appears that I’m in a soup mood. Ha! It’ll still taste good.  Just wish it was colder outside to enjoy it more.  71 degrees! In December! Some would love it but after a boiling summer, I’m ready winter.

 

 

Weekly Menu || Vol.004

It has been a very long time since I last wrote a weekly menu.  I make one every week for our family, leaving me with little excuse for not posting it here like I’ve wanted.  Writing it here gives me an archive to look through without having the clutter of keeping it in a notebook. 

It can also inspire others if they happen to come across it.

Anyway, I think it is time for more consistency and today is my attempt for just that.

Just one note before I list it.  I’ve been preparing less time consuming meals lately.  I’ve been a little burnt out with elaborate recipes and meals, so I’ve gone back to some of the tried and true recipe staples. 

MON: Spaghetti with “meatless” meatballs, bread, and small salad

TUES: “Meatless” Club Sandwich with kettle chips or baked potato

WED: Dal, roasted vegetable rice, and flat bread

THURS: EAT OUT!

FRI: Vegetable Biryani

SAT:  Sloppy Joe’s with baked fries

Once in awhile I like to share what we eat.  It’s something we all have to do and sometimes, when we are trying to think of something to make for dinner, it’s nice to have ideas thrown out there for us to use. 

We live on a very tight grocery budget so our meals are usually simple and kid friendly.

Dinners:

Oven fried chicken w/ roasted brussel sprouts and steamed carrots

Chicken Fajitas w/ tex mex rice

Meatloaf w/ pan seared green beans and onions

Spaghetti w/ garlic bread and side salad

Turkey burgers on whole wheat buns w/ baked fries

Turkey BLT w/ baked pasta crackers

Breakfast & Lunch

Toast/oatmeal/waffles

Sandwiches/bean chili w/cornbread/chicken strips

Weekly Menu

Once in awhile I like to share what we eat.  It’s something we all have to do every day and sometimes, when we are trying to think of something to make for dinner, it’s nice to have ideas thrown out there for us to use. 

We live on a very tight grocery budget so our meals are usually simple and kid friendly.  I use a plethora of online recipes, my own, and from cookbooks.  I’m not claiming that they are healthy or nutritious, but they are definitely edible. Ha! 

Anyway.  I hope our list helps to inspire you for the week.

fajita style quesadilla’s  (made with marinated skirt steak, monterey jack/cheddar cheeses)

loaded baked potatoes (cheese steak fries with fruit for the kids)

maple glazed salmon with fingerling potatoes and veggie rice

flatbread pizza – southwestern style for the adults

breakfast for dinner: homemade cheddar biscuits, eggs, gravy, and turkey bacon

baked rigatoni with meat sauce and toasted baguette

baked chicken with roasted veggies, edaname, and toasted baguette
