These beauties came out of pure luck mixed with a little exhaustion. I know, I know. Not the story you thought would be behind this delightful looking stack of goodness. Haha. 😉
Last night was a long one that consisted of two sick babies sleeping in our bed and one diaper leak resulting in: outfit change, diaper change, sheet clean up.
At 3 in the morning.
By the time all four of us nestled back into bed and my husband and sweet babies dozed into a soft slumber, I laid there wiiide awake.
But of course, right?
I tossed, I turned, and I counted sheep, but nothing worked. Dumb insomnia.
Deciding to look at the bright side of waking up with my neighbor’s
annoying rooster, I chose the day’s mantra as, Carpe Diem.
What better way to seize the day than with my awesome-to-die-for-diner-style-pancakes?
I whipped out my trusty recipe, only to realize I had about a quarter of the needed ingredients.
But part of seizing the day is to make due with what you do have! So I made up my own recipe for pancakes with what I had in the pantry & fridge.
The result? Tasty pancakes. They are not my diner style, fatty, pancakes that require 2 sticks of butter…
BUT they were tasty enough for all of us to eat plain, because I forgot we didn’t have any syrup!
A little powdered sugar sprinkled on top did the trick for it though.
Here’s my recipe
2 cups of all purpose flour
3 Tablespoons of sugar
3/4 Tablespoon of baking powder
1/2 teaspoon of baking soda
2 eggs, beaten
3 Tablespoons of unsalted butter, melted
1 3/4 cup of buttermilk (whole milk might work as well)
1 1/2 teaspoons of vanilla extract
Whisk or sift all of your dry ingredients together in a medium sized bowl. Mix all of your wet ingredients together in another bowl.
Next, add your wet ingredients to your dry and mix with a spoon. Batter will be lumpy, so don’t over mix.
Put butter on a hot griddle and pour 1/4 cup of batter for each pancake.
